One of my favorite things to cook is Salmon! Who doesn’t like a good moist fennel crusted piece of fish. I have a recipe that will make your stomachs growl. With this dish it was so unique flavors. There are so many people who don’t like to eat there vegetables. with this dish I love to deep fry the green beans for flavor and texture. I also love to make lemon herb mashed potatoes.

Fennel Crusted Salmon with Lemon Herb Potatoes, and Fried Green Beans.

I am going to break down each item and explain how I would prepare it.

Fennel Crusted Salmon:

I first take the Salmon fillet and season the fillet with a little coarse salt and black pepper.

I then take one side of the fish and dip it into a pile of fennel seeds and cayanne pepper.

You then want to get a nice hot pan with olive oil to sear the salmon.

You then want to place the crusted side down first to make the crust stick to the fish. Yu cook it for about 4 minutes on the first side, Then flip over the fish and finish in the oven at 350 degrees. By placing it in the oven it gives you time to work on other things and helps crisp up the crust on the fish.

Lemon Herb Potatoes:

You can use your favor kind of potatoes, but I like to use golden russet potatoes.

You cook the potatoes till tender. While the potates are cooking you can chop up Fine Herbs, which include: Chives, Tarragon, Sherry,  and I like to add Parsley as well. You want to chop up the herbs nice and fine.

When potatoes and nice and tender you want to run them through a food mill to make them mashed. Then you put the potatoes in a bowl with lemon creme fresh and mix together. You add the herbs last minute so they don’t turn brown on you.

Fried Green Beans:

You are going to want to wash the green beans under cold water.

Then you need to blanch the green beans in boiling water for about a minute then shock the green beans in ice cold water.

Before you put the beans in the fryer you need to dry the beans on a paper towel. You fry the beans at 350 degrees it you see a little crispy layer about 2 minutes. You take them out of the fryer and toss them with a little salt and black pepper for flavor.

Now that you have all your ingredients ready to go you can assemble your plate!
